There are several methods to prepare chestnuts. One of the most common is to
make two crosscut slices on their flat side, place nuts in bowl and cover with
water and boil for 20 minutes, drain. Cook in oven at 350¡ for 15 - 20 minutes. Or microwave on high power 3 - 4 minutes depending on the number of chestnuts you are cooking.
Shells should be removed while nuts are still hot. |
Sherried Chestnuts

- 1 cup Sherry
- 3/4 cup Sugar
- 8 oz. peeled, toasted and chopped chestnuts
- 3 apples, cored and diced (a sweet apple)

In a large saucepan, combine sherry and sugar. Over medium high heat, reduce sherry mixture by half. Remove from heat. In a bowl, toss chestnuts and apples with the sherry reduction. Use on top of blintzes, pies, poultry or pork.
